Upgraded Southwestern Salad Kit with Homemade Avocado Cilantro Sauce and Chicken

1. Take the Southwestern salad kit from Trader Joe’s and add it to a bowl with all the add-in’s, but set aside the dressing for other use. 
2. Add rinsed and drained black beans and roasted corn (from the freezer section of Trader Joe's) to the bowl.
3. For the avocado cilantro sauce: blend 1/2 avocado, 1/2 cup cilantro, 1/4 cup plain Greek yogurt, 1/4 cup olive oil, 1/4 tsp sea salt, a dash of pepper, and 1/2 cup water (add more if needed) until smooth. Mix the sauce into the salad bowl.
4. Take thin sliced chicken breast and season with taco seasoning. Heat up a hot grill pan and cook the chicken until fully cooked through.
5. Slice the cooked chicken into pieces and add to the salad.
6. Add more cotija cheese if desired. Enjoy!
