I've been having this meal on repeat this week & I'm so okay with it π finishing off the last bit of these turkey meatballs on a salad that I brought to work tonight π hope you have a fab saturday night!
To make the Cilantro Avocado Sauce: Combine 1/3 cup fresh cilantro, 1/4 cup plain yogurt, 1/2 large avocado, 1/2 juice of lemon, 1/4 cup water (or until desired consistency), sea salt, and ground pepper. Blend all ingredients in a food processor or blender until smooth.
To make the Turkey Meatballs: Combine 1 pound ground turkey, 1/4 cup goat cheese, 1/4 cup chopped sundried tomatoes, 1/4 cup chopped spinach, 1 teaspoon basil, 1 teaspoon garlic powder, 1 teaspoon oregano, sea salt, and pepper. Roll the mixture into 12 balls. Spray a skillet with avocado oil spray and place the meatballs on the skillet until brown on all sides. Then, place the browned meatballs in an oven preheated to 375 degrees Fahrenheit for about 9 minutes. Serve the meatballs and sauce over zucchini and squash noodles or a salad.
