Tuna Melt Zucchini Boats

For the zucchini boats, cut off the end and scoop out the inside. Spray with a little avocado oil spray, then season with salt and pepper. Preheat the oven to 400 degrees Fahrenheit and bake the zucchini for 12-15 minutes. While the zucchini bakes, prepare the tuna by mixing two cans of tuna with your desired amount of avocado oil mayo and dijon mustard. Add salt, pepper, and garlic powder to the tuna mixture. Stuff the prepared tuna into the zucchini boats. Top with cheddar cheese and place back in the oven for 5 minutes, or until the cheese is melty. Top with sliced tomatoes and red pepper flakes before serving.
