Air Fried Buffalo Chicken Nuggets

Cut the chicken breast into cubes and pat dry. In one bowl, whisk the eggs. In another bowl, place the breadcrumbs (an Italian blend is suggested). Dip each chicken cube into the whisked egg, then roll it in the breadcrumbs until fully coated. Place the breaded chicken pieces evenly in an air fryer basket, ensuring the bottom is sprayed with avocado oil. Air fry at 350°F (175°C) for 15 minutes, flipping the nuggets halfway through. Remove the cooked nuggets from the air fryer. In a separate bowl, combine the nuggets with 1/2 cup of Frank's hot sauce and toss to coat evenly. Return the buffalo-coated nuggets to the air fryer and cook at 370°F (187°C) for an additional 3 minutes. Serve the buffalo chicken nuggets on a bed of greens, carrots, and cabbage, drizzled with ranch dressing.
